
The muffin man, the muffin man,
Oh, do you know the muffin man,
Who lives in Haslett?
The Runner Muffin recipe that Coach Campa and his family started dishing out to the runners a few years ago is still a huge hit among hungry runners. I don't think these muffins will ever get old. Actually I just finished one. I think a couple crumbs are lodged in my keyboard... no big deal. I'll just have another one.

Runner Muffins (Makes 36 muffins)
- 1 c. Flour
- 2 c. Whole Wheat Flour
- 3 t Cinnamon
- 4 t Baking Soda
- ½ t Salt
- 3 well ripened bananas
- ¾ c butter
- 1 c Water
- 1 ½ c Raisins
- ¼ c Yogurt
- 1 c Chopped Nuts
- 1 ½ c Brown Sugar
- 3 Eggs
- 3 ½ c Rolled Oats
- ½ c Wheat Germ
- 1 c Chocolate Chips
- Combine flours, cinnamon, baking soda, salt. Set aside.
- Blend bananas in blender. Add butter and continued to blend.
- Combine water and raisins, microwave 1 ½ minutes. Add raisin water mixture, yogurt and nuts to bananas and process on high until well blended.
- Pour into large mixing bowl and add brown sugar and eggs. Mix until combined.
- Add dry ingredients, oats, wheat germ and chocolate chips – mix until well combined. Bake 15-17 mins at 350 degrees. Makes 36 muffins.
